You’ve probably seen it before: a guest who’s had one drink too many swears that coffee will sober them up, or orders a greasy burger to “soak up the alcohol.” These myths are everywhere, but the truth is simple; There’s no quick fix for intoxication.

As a server or manager, understanding what really works (and what doesn’t) protects your guests, your license, and your team.

The Science of Sobering Up

  • The liver is the only organ that metabolizes alcohol, and it processes about one standard drink per hour.
  • No amount of coffee, cold showers, or heavy meals will speed this up.
  • The only true way to sober up? Time.

Myths That Don’t Work

  • Coffee – It may make someone feel more awake, but it does nothing to lower blood alcohol content (BAC).
  • Cold showers – Can shock the body, but won’t remove alcohol from the system.
  • Greasy food – Slows alcohol absorption if eaten beforehand, but once alcohol is in the bloodstream, food won’t change intoxication levels.

What You Can Do

While you can’t speed up sobriety, you can help guests stay safe and reduce the risks of overconsumption:

  1. Stop Service Immediately
    • Politely refuse further alcohol once a guest shows signs of intoxication.
    • Offer alternatives like water, soda, or coffee (not to sober them up, but to slow further impairment).
  2. Encourage Hydration
    • Offer water to help with dehydration.
    • Suggest drinks with electrolytes (sports drinks, coconut water if available).
  3. Provide Food Options
    • Nutrient-rich snacks like bananas, nuts, or eggs won’t sober someone up, but they can help replenish lost nutrients and reduce hangover effects later.
  4. Offer Safe Alternatives
    • Call a ride-share, taxi, or suggest a designated driver.
    • Have clear house policies in place for handling visibly intoxicated guests.
  5. Lean on Your Training
    • Use your Responsible Beverage Service (RBS) training to recognize impairment early and act confidently.
    • Document incidents when service is cut off to protect your team and business.

Why This Matters

When staff buy into the myths of “sobering up,” they risk unintentionally overserving and creating unsafe situations. Guests may feel more alert after coffee or food, but their BAC remains the same and so does the liability for your establishment.

By sticking to the facts, enforcing alcohol laws, and using professional judgment, servers and managers not only protect their guests but also prevent fines, suspensions, or even license revocation that can disrupt business operations.

Bottom Line

Time is the only cure for intoxication. Your role isn’t to sober guests up—it’s to manage service responsibly, keep everyone safe, and ensure your business stays compliant. By combining your training with smart, safe practices, you set your team up for success every shift.
